Your thoughts on cookware?

Maybe I'm off topic here, but does anyone want to talk about cookware (pots/pans/knives etc.)? With the holidays approaching I'm thinking of what I have, what I "need" and what I would LOVE for Santa to bring me.

What do you love, and why?

I really love my All Clad pots and pans. I wouldn't give those up.

I used to be a big fan of Henckels Pro S knives. Then about a year ago I got my first Wustof. Man, what a difference. They hold an edge so much better.

Plus Ward says that the guy at Zabars hinted that their branded knives are made by W*.

I'm trying to think what I cant live with and the fanciest thing we have is probably our ONE Henkel knife and I surely use it for almost every meal (if cereal needed cutting it would get used then too).

But really what I love the most in my kitchen are the low-tech things: mi caldero (big cauldron), pilon (mortar and pestle), la tostonera (toston smusher) and mi cafetera (same one my grandmother used).

I could not live without my cast iron pot from my grandmother. I have several eras of Revere pots and pans. The oldest seem best. Lisa's All Clad are definitely number 1.
