This is another recipe from Nigella Lawson's
Nigella Express. These are super-yummy and it is very hard to eat just one.
- 1 3/4 cups flour
- 3/4 cup sugar
- 1/2 cup packed brown sugar
- 2 tsp baking powder
- 1 tsp ground ginger
- 2/3 cup sour cream
- 1/2 cup vegetable oil
- 1 TBS honey
- 2 eggs
- 1 1/2 cups peeled and diced pears (about 1/4 inch dice)
- Preheat oven to 400 degrees. Line a 12-cup muffin pan with paper muffin cups.
- In a large bowl mix flour, sugars, baking powder and ground ginger.
- In another bowl whisk together sour cream, oil, honey and eggs. Fold into dry ingredients.
- Mix in pear dice and divide batter evenly among the muffin cups.
- Bake about 20 - 25 minutes or until golden brown. Remove to a cooling rack.
